Everyone around me seems to have been sick or is currently sick. I’m feeling like Mr sickness is knocking at my door just waiting for me to open it. I haven’t been sleeping well and that seems to be out of my hands. So, I’ve been thinking about “detoxing” my body. Nothing crazy like a liquid diet, but I want to eat more raw veggies & fruits, give up white sugar, caffeine, and grease for 3-10 days. I love cake/cookie like sweets and coffee so I did a little test run last week to see how easy it would be. It wasn’t as difficult as I thought for 1 ½ days and then I told myself “this is a test run and doesn’t count”. A friend made peanut butter cookies and I can’t help but eat them. So, I’m going to try for reals this time, starting today! I made some delish graham cracker banana pancakes yesterday and I think they will satisfy my sweet tooth (I freeze the leftovers and put them in the toaster when I want one. I think I love them more than Sophia). I’m drinking jasmine tea right now which I normally enjoy… but I really want snicker doodle coffee with vanilla creamer.
Here’s the pancake recipe if you want to try it.
4 oz graham crackers ground to a powder (I think it was 8 squares)
1 cup Flour
1 tsp Baking powder
¾ tsp Baking soda
½ tsp salt
2 ½ Tbsp Sugar
1 C buttermilk
¾ C Plain yogurt
3 eggs
2-3 bananas sliced
Grind the graham crackers to a powder. Add the flour, baking powder, salt, and baking soda. Mix.
In another bowl add eggs, sugar, buttermilk, and yogurt. Mix well.
Add dry ingredients to wet and only mix until it’s moist (let it stay a little lumpy)
Pour pancakes and add 3-5 slices of banana immediately. Flip and cook until golden brown.
(If you don’t have plain yogurt you can use vanilla or you can use 1 ¾ c buttermilk total)
